Grilling Summer Salads

Summer is slowly coming to an end, however the heat has not taken a turn yet. It's been at least 100 degrees everyday here lately. But we are surviving! We've had some delicious summer salads for dinner to cope with the heat and humidity. They were very good and very easy, and nice to eat something light when it's so hot. Below are some pictures of what I made and what they were supposed to look like. It's amazing what the magazines can do!

Mine did not turn out quite as beautiful as pictured below, but it worked. The dressing and marinade on this salad is deliciously light and fresh. We paired it with some grilled okra.



This salad was so fun. I did not end up grilling for this one. It was just too hot and Lyle was tired after work. So it may have been even better. I just did the panzanella on the stove top, followed by the shrimp.





Lyle and I are heading to Seattle on Friday for a couple weddings and then to go on a boat trip through the San Juan Islands with both of our parents. We are very excited and it looks as though the weather may work out in our favor. A North West blessing!

When we get back I'm going back to work. Summer is coming to an end for me and it's time. I've ran out of projects to keep me busy, and I have to say I'm getting a little bored. But the good news is I am blessed to have a job and Lyle and I will both be employees of the same hospital (although we won't have any interaction throughout the work day).

However, the cats may be a little depressed to not have me with them all throughout the day.....but they'll survive.
