Last night was my one "real dinner" night of the week. I love to cook, but lately it hasn't been something I get excited about....until I do it. I'm trying to do at least one real meal a week. This one turned out delicious and despite the words "stuffed chicken", it was really easy. It's another Real Simple recipe. You can find it here. Just a few ingredients: chicken cutlets, roasted red peppers, feta cheese, broccoli, red potatoes, salt & pepper, & olive oil. Just make sure you have toothpicks or skewers to hold the cutlets together.
Go ahead. Try it. You'll surprise yourself.
